Categories: Info Hawaii
Yield: 1 Servings

Wait a couple of days before you clean up the imu, to make sure the fire is out. Save the rocks, you will agree that they are truly gold.

WHAT ELSE SHOULD I SERVE?

Here are some sample menu items:

Kalua Poaa Broiled Marinated Beef Mahi Mahi Tempura style Sweet and Sour Chicken

Baked Sweet Potato Steamed Rice

Cold Items:

Poi Lomi Lomi Salmon Assorted Fruits Toss greens Ahi Poke Pasta Salad Fruit Salad Potato Salad Assorted Sushi

DESSERTS:

Coconut Cake Haupia (Hawaiian Coconut Pudding) Coconut Cream Pie Banana Cream Pie Macadamia Nut Pie

You will notice that some of the menu items are not indigenous Hawaiian foods, the luau, through the years have adopted regional dishes from the Japanese, and Chinese. Not only have they been in Hawaii's rich history but it was also added for the guests, items that they can relate to. If you want serve poi, it is an item not easily found. You will have to call around to specialty stores. It is usually packed in plastic bags ready to serve. Try to keep the menu large, keep in mind that a Luau should be a lavish feast.

MUSIC

It would be nice to have Hawaiian music during the period between the buffet and the Hula show. If you can get the entertainers to play during that time that would be great. If not and you just want to play some easy Hawaiian music to eat and drink by here are some names of Hawaiian Groups you may be able to find at a comprehensive music store or you may have to special order:

The Brothers Cazimero Keola and Kapono Beamer Cecilio and Kapono The Peter Moon Band Gabby Pahinui The Hawaiian Style Band If you would like color photos of step by step cooking procedures, send $10.00 Money Order to:

James Balanay 2208 River Run Dr. #50 San Diego, Ca. 92108

I will also include recipes for the following dishes:

Broiled Marinated Beef Mahi Mahi Tempura Sweet and Sour Chicken Lau Lau Ahi Poke Tako (Octopus) Poke Lomi Lomi Salmon Haupia (Hawaiian Coconut Pudding) Macadamia Nut Pie
